CHICKEN ON SHIITAKE MUSHROOM AND SHIRATAKI NOODLES

2020 is just around the corner and many of us may be thinking a New Year's resolution of getting into better shape. I admit that I am just a novice but with my interest in health and fitness blogs, these might be useful tools to help you stay in shape. Of course, with tons of blogs/vlogs, you can pick anything that you feel suits your lifestyle and you may know where to start.

This food is savory and healthy that usually serve over rice or starchy noodles but by using Shirataki noodles, it is a happy version of cutting the carbs and gluten-free stir fry meal. This is just one of the many ways you can use as a replacement for pasta and rice in all your favorite dishes. In my hometown alone, we can name different kinds of 'pancit' (in Filipino cooking noodles).

Shirataki noodles are often called ‘miracle noodles’ and great substitute for traditional noodles because it is extremely low in calories, help you to feel full and may be beneficial for your weight loss. This is also having benefits for blood sugar levels, cholesterol and digestive health according to our friend, Google.

Moreover, Shiitake mushroom used for boosting the immune system, HIV/AIDS, lowering blood cholesterol levels, hardening of the arteries, diabetes, eczema, colds and flu, treating prostate or breast cancer, and as an anti-aging agent.

Ingredients:

2 tbsp extra virgin olive oil

1 8 oz chicken breast (cut into small cubes)

2 scallions, julienne

1 carrot, julienne or jardiniere

1/4 cabbage, thick slice

1 small bell pepper, julienne

1/4 cup fresh shitake mushrooms (or re-hydrated and rinsed, if dried)

1 8 oz package shiratake noodles (rinsed and drained)

1/4 cup water

1/3 cup Kikkoman


1. Heat oil on high heat

2. Add chicken and cook until lightly browned

3. Add scallions, carrots and shitake mushrooms, cook for 3 minutes

4. Add sauce to stir-fry

5. Add noodles and water, stir-fry for 3-4 minutes or until sauce thickens

6. Plate or bowl and garnish with sesame seeds


Yield for 4 servings and per serving; 272 calories.

You can add the noodles to just about any recipe that calls for pasta or rice to slim down the carbs and calories. Shirataki noodles can buy in well-stocked supermarkets in Dubai, offering a healthy food products around the world. Shirataki noodles are sealed in water, and you will find them packaged in small, clear bags often in the refrigerated sections, next to the tofu.
